Soybean paste

In the Heian period (794-1185) miso was already sold in Japan. However it didnt become popular until Muromachi Period (1333-1568).

Miso is a soybean paste. Miso is made from soybeans using a special method that includes steaming and mixing with salt. There are two different kind of miso, akamiso and shiromiso , red and white miso. Miso is used most commonly to cook a miso soup called Misoshiru. Miso paste is then mixed with hot water and different ingredients are added, such as vegetables, onions and fish-powder.
